  • 1 lb boneless, skinless chicken breast, cut into thin strips
  • 2 tbsp olive oil
  • 1 onion, sliced
  • 2 bell peppers, sliced
  • 1 zucchini, sliced
  • 1 cup sliced mushrooms
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1/4 cup soy sauce
  • 1 tbsp honey
  • 2 tbsp cornstarch
  • Salt and pepper, to taste


  1. In a small bowl, whisk together the soy sauce, honey, cornstarch, and 1/4 cup of water until smooth. Set aside.
  2. Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Add the chicken strips and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
  3. In the same skillet, heat the remaining 1 tbsp of olive oil over medium heat. Add the onion, bell peppers, zucchini, and mushrooms, and cook until tender, stirring occasionally, about 7-10 minutes.
  4. Add the minced garlic and ginger to the skillet and stir-fry for another minute.
  5. Return the chicken to the skillet and pour the soy sauce mixture over the top. Stir-fry for another 2-3 minutes, or until the sauce has thickened and the chicken and vegetables are coated.
  6. Season with salt and pepper to taste, and serve immediately over rice or noodles, if desired.
