Flavorful and Healthy Roasted Vegetable Quinoa Bowl

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 2 cups mixed vegetables (such as broccoli, cauliflower, carrots, and bell peppers), chopped into bite-sized pieces
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cumin
  • 1 avocado, sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh cilantro

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the quinoa in a fine-mesh sieve under running water. In a medium saucepan, combine the quinoa and water and bring to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the water is absorbed and the quinoa is tender.
  3. While the quinoa is cooking, toss the vegetables with olive oil, salt, pepper, garlic powder, paprika, and cumin in a large bowl.
  4. Spread the vegetables in a single layer on a large baking sheet. Roast for 20-25 minutes, stirring once or twice, or until the vegetables are tender and lightly browned.
  5. Divide the cooked quinoa among 4 bowls. Top with the roasted vegetables, avocado slices, feta cheese, and cilantro.
